Sorry I haven’t blogged in a few days. Thing 1 and Thing 2 have been sick with fevers, vomiting, cough and congestion since last Wednesday and I’ve been taking care of them while also trying to spend as many moments as I/we can with my husband’s Grandfather. Hospice has advised us he is in his final days and we’re spending as much time as we can with him and our family. We are comforted by knowing he will spend eternity to Heaven but that doesn’t take away the pain of losing a loved one. Please keep us all in your prayers.
I tried to take advantage of the extra time at home by doing a little food prep to help me minimize the amount of time I spend in the kitchen each evening. I bought some chicken breasts on sale at HT (buy 2 get 3 free) so I grilled some, baked some, and crock potted some (not even sure if that’s a real term but I’m going with it) and froze it for future use. Tonight we are having some of the grilled chicken in the form of quesadillas. Not only are they easy to fix, but the kids (and the hubby) love them. And they’re an easy way to sneak in veggies on the kiddos. Plus the extras are good for snacks for the kids when they just can’t wait for dinner.
I also received some neat storage organizers I had ordered online a couple of weeks ago. They’re called Snap ‘n Stack by Snapware. I found a couple at Wal-Mart after Christmas and I think they are just awesome for storing ornaments that don’t come in packages. I initially bought one to hold the new Advent ornaments we made a Girl’s Craft Day this year but I decided I wanted one to store each of the kids’ homemade and store bought ornaments that we will collect over the years. This way I can one day hand them one neat little package and they can whisk them away and free up space in my storage building.
So, what’s planned for this week? Visiting with PaPaw, of course, but my birthday is also coming up this weekend. No big plans that I’m aware of. A dinner that I didn't cook myself with cake and ice cream would be nice. And some more of the 70 degree weather we had this weekend would be really nice too. Unless there’s a chance of snow, in which case I’ll take a foot please! There’s nothing like a good snow to this girl. I just love it!!! And it usually does snow on or near my birthday…I’m just sayin’.
